Demidov was born in Sergiyev, a city about two hours from Moscow, on December 19, 2005. At the age of 15, he tallied nine points (two goals and seven assists) in six games in the Russia Region U18 league. The following season he recorded 26 points (14 goals and 12 assists) in 11 games in the Russia U17 league.
During the 2022–2023 season, Demidov played for SKA-1946 St. Petersburg in the MHL (junior league). There, he led all skaters with 62 points (19 goals and 43 assists) in 41 games. The following season, he scored 60 points (23 goals and 37 assists) in 30 games. His performance earned him a spot on the SKA St. Petersburg roster for the start of the 2024–2025 KHL season. That year, he scored 49 points (19 goals and 30 assists) in 60 games.
Heading into the 2024 NHL Draft, Demidov was considered one of the top prospects and was selected fifth overall by the Montreal Canadiens, with the pick announced by Canadian singer Céline Dion. After completing the regular season with SKA St. Petersburg on April 8, 2025, he signed a three-year, entry-level contract with the Canadiens. On April 14, 2025, he made his NHL debut, scoring one goal and one assist in the first period of a 4–3 shootout loss to the Chicago Blackhawks.
